We've been putting the canners through a workout around here. My husband canned umpteen jars of pickles...I was like...umm we still have pickles left from last year...we don't eat that many pickles!!!
Then we did vegetable soup--a first...salsa--the girls actually made this with hubby's supervision...then green beans--again...even though we still have some left over from last year. This year's garden has been incredible in terms of production. We've given a ton of veggies to the open door program at the church...an organization that delivers meals to shut in's on Sunday mornings. Literally-5 gallons of green beans and 10 gallons of cukes.
The incredible thing was that the salsa called for 12# of tomatoes. Tomatoes were advertised for $1.99/# on sale! Yikes--that's a LOT of money for salsa if you had to buy the tomatoes, eh?
Did I mention zucchini? We've been giving the ones that got away--aka grew to be a foot or more--to the chickens! They're really liking the extra produce & it's less in chicken feed that we have to buy!
The thing I most want to make is my aunt's spaghetti sauce...WE need A LOT of tomatoes for that & they're just starting to come in. We usually have tomato plants at the lake as well...but not this year.
I'll need to get some photos of stuff...but that would mean actually getting the camera out and taking a photo! Hopefully that will happen. Today's going to be making more zucchini bread--we're just about out.
